Last March, Paul Del Rez and Diego Silva landed in Santa Teresa with a pretty loose plan. Paul came with the reputation of a chef who knows how to make a room pay attention, Diego with years of experience in kitchens around the world, and both of them with more interest in having a good time than making the whole thing feel too serious.
That was enough for us.
Over the next few days, they hosted two dinners at House of Somos Restaurant, building menus around local produce, fresh fish and whatever felt right once they were here. We took them fishing, showed them a bit of Santa Teresa, and then mostly let them get on with it.
The dinners were exactly what we hoped for: busy tables, a loud kitchen, great food and that slightly chaotic energy that usually means everyone is having a very good time.
They also took over Somos Café for brunch, this time keeping things simpler with sandwiches, coffee and a slower start to the day. Same chefs, different mood.
That’s probably what we like most about these takeovers. People come to Costa Rica with their own style, spend a few days getting a feel for the place, then leave a little bit of themselves behind in the kitchen.
Paul and Diego did exactly that.
Two dinners, one brunch, and a very good few days at House of Somos in Santa Teresa, Costa Rica.
